270 Wolf Tray (Stainless Smoking & Grilling Tray) & BBQ BUS Rails
Versatile stainless steel perforated tray for grilling, smoking, braising, resting, and cooling. Our buffed stainless steel trays are super-easy to clean, dishwasher safe, and are designed to last for years. The small perforated pan is Wolf Revenge's (pitmaster Chiles Cridlin) secret to avoiding butter bath "tan lines" when cooking competition chicken (hence the name of this tray!) Larger trays are ideal for smoking and glazing ribs, smoking whole sides of salmon, smoking pork belly for bacon or pork belly burnt ends, grilling fish and vegetables.
Our trays are approx 50% heftier than most grilling trays. To our knowledge, our trays are the only ones on the market designed to conveniently fit inside disposable aluminum pans (half and full size, respectively) or rest atop a full-size cookie sheet (as our Classic Large tray does).
NEW ITEM: BBQ Bus Rails for the 270 Wolf Tray Brian Dwyer of The BBQ Bus Cooking Team introduced his BBQ Bus Brisket Holder a few years ago to great acclaim. It helped a brisket hold it's shape while cooking. Building off of that basic concept, Brian wanted a holder that could accommodate different widths of meat and increased air flow. A few iterations of designs between Brian, Chiles Cridlin, and Terry West of 270 Smokers, and we now have the BBQ Bus Rails for the 270 Wolf Trays. Simply insert the side rails into a row of perforated holes in our Large Classic Tray or Large Elevated Tray and cook your brisket either directly on your smoker shelf, in a full size disposable aluminum pan, or a cookie sheet. Note, if using with the Large Classic Tray, invert the tray over a full size disposable cookie sheet (such as the Kingsford Heavy Duty tray available at Lowe's). Rails are sold as a set of 2.
Classic Small tray: 11" x 7 5/8" with 1 3/8" upward lifting lip on 2 ends. Ideal for butter-bath chicken and grilling small fish and vegetables. Nests inside small disposable pan (or place 2 side-by-side inside a large pan). Also very useful as a steak resting tray (invert on the cool side of your grill).
Elevated Small tray: ~10 5/8" x ~7 1/2" with ~5/8" downward resting lip and ~5/8" upward lifting lip. Ideal for smoking pork butts & small meats. Elevated tray enables air flow underneath and all around the meat. Place directly on smoker shelf or nest inside small disposable pan (or place 2 side-by-side inside a large pan), if desired.
Classic Large tray: ~16" x ~11 1/4" with 3/4" upward lifting lip on all 4 sides. Can be placed directly on smoker shelf or if desired, rest on the ledge of a disposable cookie pan.
Elevated Large tray: ~16" x ~10" with ~5/8" downward resting lip and ~3/4" upward lifting lip. Ideal for smoking, resting, and transporting large items such as full racks of ribs, brisket, pork bellies. Resting lip ensures air flow underneath and around whatever you're cooking or resting. Place directly on smoker shelf or if desired, nest inside a large disposable pan.

Note, if cooking or resting salted foods in aluminum pans (or foil) it is recommended to place a silicon or parchment sheet as a barrier between the aluminum and any stainless steel item to prevent a galvanic reaction.
